It's truly a heartbreaking news ,
It is so unbelievable and yet everyday something is happening
somewhere to turn someone's life upside down.
Life is hard and when you have a really good day you need to sing and laugh and share.
But how many times we can have such good laughing ?

The cake that we baked last 2 week - Fruits Pastry CakeI hardly share recipe with you over my cooking or baking,
Cos i myself also copy and learn from others cooking blogs,
But this cake i have to share,Cos is taste good and easy to bake .

(A)
165g sugar (original 200g)
100g butter
55g sour cream/yogurt (original 50g)
(B)
3 eggs
(C)
1 tsp vanilla extract

1 tsp lemon/orange zest

210g plain flour }

1 tsp baking powder } sift together

fruits for topping
( i used orange and apple as i only have those in hand :)

Method:
Wash, cut and strain fruits in a strainer.
Grease and flour the side of a baking pan and line the base with parchment paper.
Beat (A) together till light and fluffy. Add (B) one at a time, mix well.
Add (C), mix to combine.
Add sieved (D) and mix until everything is smooth.
Place batter into prepared pan .
Place fruits on top and decorate as desired, not to press down the fruits.
Bake in preheated oven of 180C for 60-70 minutes or until the skewer comes out clean.
Leave to cool on wire rack and sprinkle with icing sugar if desired.
Another wonderful recipe that i wanna to shared was this ,
Moist Chocolate Cupcake,
Someone like him that love to bake cake yet dun like to eat cake,
Can have half of the cupcake !!
So is A Must Try recipe to share.

1/2 cup hot boiling water (mix with 1tsp Nescafe Instant Coffee Powder)

3tsp baking powder
40g cocoa powder
Sift flour, salt, baking powder and cocoa powder in a big bowl.
Dissolve baking soda in milk.
Cream butter and sugar until light.
Add in vanilla essence and eggs, continue beating.
Add in the rest of the ingredients (milk, coffee liquid and the sifted flour mixture)
Beat till it's smooth.
Spoon batter into greased paper liners 3/4 full.
Bake in a preheated oven at 160c for about 20mins or until the skewer inserted to the center of the cake comes out clean.
Leave it to cool on rack before icing.
Decorate with whatever type of your preference icing or dust lightly with icing sugar.
It's best to chill first before consumed the cupcakes.

I was about to say "ready or not for Monday's ??
