A Matter of Taste : Lemon Cupcakes

Cupcakes with a Twist !!
Like to share this recipe with you.
Simple and nice .

Ingredients:
2 cups cake flour, 1 1/4 cups sugar ( i used 1 cup)
2 teaspoons baking powder,
3 to 4 teaspoons lemon juice,
Zest of 1 large lemon (outer yellow skin),
3/4 cup milk, 2/3 cup oil ( vegetable oil or corn oil)
2 tablespoons lemon flavoring
3 eggs separated

Instruction:
Preheat oven to 325 F
In large bowl, combine flour, 1 cup sugar, baking powder and Zest of 1 large lemon,
Add milk, oil and lemon flavoring & mix well.
Beat in egg yolks, one at a time.
In separate clean bowl ,
Beat egg whites until stiff, but not dry m adding remaining 1/4 cup of sugar.
Fold egg white into better
Pour into prepared pan
Bake 20 to 25 minutes or until inserted comes out clean.
Cool for 10 minutes

how come your baking tray is so clean? u wash the tray and arrange the cups purposely for photo???hehehe
