A Matter of Taste : Sunshine Roast Chicken & Financiers

Over the weekend,
I can't wait to try out this 2 new recipes.
& the new Pyrex i bought last week during sale :)
Just share ... here :)
Sunshine Roast Chicken :)
Recipe source : Jamie Oliver 
2 or 3 sweet potatoes, cut into 3( i used orange and yellow sweet potatoes)
1 corn , cut into 4 .
2 medium onions , cut into wedges,
1 garlic bulb, halved horizontally,
olive oil
1 whole chicken, i choose the small one.
1 lemons.
some coriander, leaves picked (cilantro)

  • Take your chicken out of the fridge 30 minutes before it goes into the oven
  • Preheat your oven to 240°C/475°F/gas 9
  • There’s no need to peel the vegetables – just give them a wash and roughly chop them
  • Pile all the veg and garlic into the middle of a large roasting tray and drizzle with olive oil
  • Drizzle the chicken with olive oil and season well with salt and pepper, rubbing it all over the bird
  • Carefully prick the lemon all over, using the tip of a sharp knife (if you have a microwave, you could pop the lemon in these for 40 seconds at this point as this will really bring out the flavour)
  • Put the lemon inside the chicken’s cavity, with the bunch of herbs
  • Turn the heat down immediately to 200°C/400°F/gas 6 and cook the chicken for 1 hour and 20 minutes

Financiers (pronounced fee-nahng-syehr) are lovely French tea cakes,
that also go by the name Friands, which aptly means "dainty" or "tasty".
Take a bite and you will be rewarded with the delicious flavor of caramelized butter and toasted almonds.
Financiers were baked in rectangular molds that were said to resemble bars of gold.
Of cos this molds can be bake for others recipe .
These little cakes are firm and moist from the ground almonds with rich buttery flavour.
But is not light sponge cakes as i first thought them to be ...
I found that this cake was too sweet for me,
But the boys love it .... cos is sweet !!
180gm unsalted butter
90gm all purpose flour
1 tsp baking powder
100 ground almonds
6 eggs white
160gm icing sugars

  • Put the butter in a small saucepan and bring to boil over medium heat.
  • Swirling the pan occasionally . allow the butter to bubble away.
  • Put the flour, ground almonds, icing sugar and baking powder into a large mixing bowl. Add the egg whites a little at a time. Whisking well after each addition. Pour in the butter and whisk through until just combined.
  • Spoon the mixture into the holes in the prepared tin until they are almost full & some almonds flakes
  • Bake in the oven for about 20 to 30 minutes or until they are golden
  • Turn out onto a wire rack to cool and serve.

    Little lamb,
    ever since my kids always fall sick, we r not encourage to go out too often, so .. spending most of the time at home . kids watching tv, drawing, playing ... and i m busy in the kitchen .

  7. Yes Yes try macaroons. Heard that it is actually pretty simple to make. But must hv the right recipe.
    The price that the stores charge for one macaroon is 'crazy'!
