The KA & the baking

For the last 3 weeks,
My KA was send back to the shop for some slight adjustment.
Cos the KA mixer head cannot lock at the down position,
Means while you were beating, the mixer head can easily lift up.
This happened after i adjust the beater adjustment screw , to clears the bottom of the bowl from the beater.

Anyone who own a KA have this problem ?
That you need to adjust the screw according to your beater EACH time.
Now at the moment , the flat & dough beater work fine and clear from the bowl.
But the whisk might still need to adjust to clear the bottom of the bowl . 
If i were adjust the whisk beater to clear from the bowl, means the flat & dough beater will be at a position that is too far from the bowl .... 
I hope to get to the right position for all 3 beater to work well .
So i don't need to adjust every time i change the beater  :(
What is the best way to get the right adjustment ??
 Hope someone can leave me a comments on this matters.
I worry, 
if too must of adjustment will again have same problem about the head down position cant be lock again :(

Now the KA is back ... huhuhu, 
Means more baking to come .
I also custom made a cover for my new KA :)
No , no .... not me who sew this cover . 
I ask someone who design and sew this for me .. pretty right ??
Sometime i realize person who know and good in sewing & Knitting, that talents was gifted :)
I admired and amazed people who can sew/knit well.

The 1st cake i try after the KA was back with me ... 
was this Avocado Pound Cake .
 My SIL pass me 2 avocados,
Too bad my kids doesn't like the taste of avocado itself.
But at least they enjoys this Avocado Pound Cake .
 Avocado Pound cake
(recipe source: adapted from Joy of baker with minor changes) 
& i get from Nasi Lemak Lover with minor changes

Makes a loaf pan

Flesh of 1 Avocado
50ml milk

125g butter, softened
150g sugar ( * i reduce to 100g)
1/2tsp vanilla extra

2 eggs

200g cake flour
40g Polenta (fine corn meal) *( i can't get corn meal, so i added 40g Almond ground)
1/2tsp baking powder
1/2tsp baking soda
1/4tsp salt

Method
1. Blend avocado flesh together with milk, set aside.
2. Beat butter, sugar and vanilla until light and creamy.
3. Add in eggs one at a time, beating well after each addition.
4. Put in avocado milk mixture, combine well.
5. Add in flour, Polenta, baking powder, baking soda and salt, mix well.
6. Bake in a pre-heated oven at 180c for 45 minutes or until done when tested with a skewer.

The taste was just nice of avocado , buttery and soft .

2 of my boys love Oreo Cookies, so do mummy :)
I used the same recipe for this Oreo Cuppies & Oreo Butter Cakes.

Oreo Butter Cake

225g cake flour (or Top Flour)
1 tsp baking powder
½ tsp baking soda
½ tsp salt
110g unsalted butter, cut into pieces
170g sugar ( i reduce to 110g)
2 eggs, beaten
1 cup yogurt (150ml)
1 tsp vanilla essence
80g Oreo cookies, roughly crushed ( 8 to 10 oreo cookies)
Whole Oreo cookies for decorating

Method
Preheat oven to 180C and grease or line a 8-inch round tin.
Sift together cake flour, baking powder, baking soda and salt.
Cream the butter and sugar until light and creamy. Dribble in eggs slowly, about 1 tbsp at a time, beating constantly for about 2 mins.
On LOW speed, beat in 1/3 of the flour mixture until just combined. Beat in ½ of the yogurt. Then beat in 1/2 of the remaining flour mixture, followed by the remaining yogurt, and vanilla extract. Finally beat in the remaining flour mixture.
Lastly, fold in the crushed cookies.
  Pour into prepared tin, arrange whole Oreos on top and bake for about 40 - 50 mins till skewer inserted comes out clean.
Cool in pan for 5 mins. Unmold and cool completely.

Note:
I use a stand mixer for this, which can ‘fold in’ the flour and yogurt gently on its lowest speed. If you cream the butter manually or with a hand-held mixer, after the eggs have been incorporated, use a spatula to gently fold in the flour and yogurt.
As for the Oreo Butter Cake,
I add more 20g flour,
More Oreo Cookies .
Half cup of milk .
Both the Oreo Cake( Cake & Cupcakes) turn out great .

  4. Orea + cake looks heavy, I prefer lighter cake like Avocado Pound Cake.

  5. i never had that problem about the screw but once my ka got jammed because i accidentally used the wrong beater for my bread. I had used the kbeater instead of the dough..the dough was heavy..i suspected that was the cause cos the machine just stopped half way. I'm always curious about the taste of avocados in cakes, you mean the taste is quite evident in the cake? have a nice trip.

      Well the Avocado cakes , not really reach in avocado taste, abit only, more to butter taste .
